Friday Food part 2 Cranberry and Clementine sauce by Zoe
5 Minute Cranberry & Clementine Sauce
This is so quick to make you’ll never need to reach for a jar again …
300g fresh cranberries
¼ cup measurement freshly squeezed clementine juice
¼ cup clear honey. I used Organic RAW Vibrant Living (agave syrup also works)
Finely grated rind 1 clementine (or 2 if you like it zesty!)
Couple of tablespoon water if needed towards the end
1. Put all ingredients into a small pan.
2. Heat on a medium heat until cranberries start to burst
3. Reduce heat, keep an eye & stir regularly for last few minutes. This happens quickly.
4. If you think it looks too thick add a few tablespoons of water
5. Taste – I prefer mine more ‘tart’ so if you prefer more sweetness, adjust by adding more of your chosen sweetener.
6. I love to serve at the table in in vintage tea cups.
Keeps well in the fridge for at least a week, so can be made ahead of time. Perfect served with cheese, cold meat cuts as well as the bird or a nut roast!
