Friday Food : Lockdown recipes :Banana bready, cakey treat
For some reason I can’t quite fathom, banana bread has become the dish of this Covid-19 time. Everyone seems to be baking some variation or other of it. Here is Shabana’s version. She likes the crunch provided by the addition of walnuts.

Ingredients
140g butter, softened, plus extra for the tin
140g caster sugar
Two large eggs, beaten
140g self raising flour
1 teaspoon baking powder
Two very ripe bananas, mashed
Handful of walnuts (if you choose)
Method
Heat oven to 180C/160C fan/gas 4
Butter a 2lb loaf tin and line the base and sides with baking parchment
Cream 140g softened butter and 140g caster sugar until light and fluffy, then slowly add the two beaten eggs with a little of the 140g self raising flour
Fold in the remaining flour, 1 tsp baking powder and the mashed bananas
Add walnuts
Pour into the tin and bake for about 30 minutes
Cool in the tin for 10 minutes then remove to a wire rack
