Honey Madeleines
(Makes 12)
These Honey Madeleines are quick, easy to make and delicious!
I always make a few batches in the run up to Christmas so that I can welcome any friends and family that drop by to share in some festive cheer.
Trust me when I advise that you should make a few batches. I have been known to eat all 12 of these cute, light, fluffy darlings when they are warm. They are that good.
100g Butter
100g Golden Caster Sugar
100g Plain Flour
2 Large Eggs
2 Tbsp honey, warmed
½ Tsp Baking Powder
Icing Sugar, for dusting
Preheat your oven to 165C / gas 4.
Brush your madeleine tray with a little butter.
Whisk the eggs and sugar in a bowl until pale, light and fluffy. Sift in the baking powder and flour. Whisk to combine, then add the melted butter and honey. Leave to stand for 30 minutes.
Using a teaspoon, fill each mould three-quarters of the way up with the batter. Bake for 8-10 minutes until risen and golden, then tip onto a cooling rack. Repeat with the rest of the mixture. Sieve a little icing sugar over them.
