Tuesday Treat : Barfi – a delicious Indian/ Pakistani sweet

Barfi is a South Asian sweet treat which is a great gift and often given or served at celebrations and special occasions.
This recipe makes soft, melt-in-the- mouth Pakistani style barfi.

Ingredients

2 tbsp pure butter ghee / clarified butter
2 cup dry milk powder
1/2 cup milk
1/2 cup caster sugar
1/2 tsp green cardamom powder / elaichi

Half cup chopped almonds

Method

1- grease the pan and set aside

2- Heat butter in a large nonstick pan over
medium to low heat . Continuously stir until
butter is melted .

3 – Add milk and let it boil on low heat for 2
mins . When milk starts bubbling,add dry milk
gradually , keep stirring so no lumps are
formed .Stir continuously, especially around
the edges, to stop the mixture catching on
the of the pan and burning.

4- Add sugar and keep stirring till mixture
thickens and turns into dough .

5- Add cardamom powder half chopped almonds ,mix well and switch off the flame .

6- Transfer this mixture to a greased tin . Flatten / smooth with the back of a spoon or spatula .

7- Garnish with the rest of chopped almonds and press gently with Spatula .

8- Allow it to cool and set at room temperature for at least 2 hours before serving or storing

.Remove barfi from tin . And cut into desired shape .

TIPS

* It’s best to use a non-stick pan to make barfi as it is less likely to catch and burn and much easier to clean .

* You can add pistachio, coconut, chocolate, dried fruit or keep it plain .

* Store it in an air tight container for 5 days and it can stay good for 2 weeks if refrigerated.
