Friday Food : Delicious Chickpea and Dill thingy by Charlotte George

Charlotte is a writer and director of film, television and theatre – including work for the BBC, Channel 4 and as the Director of Actors for Human Rights at ice&fire Theatre. She has been vegetarian for 10 years, and in that time has learned some pretty great recipes, which she is more than happy to share.

 

This is possibly the easiest recipe I know. And its also really cheap. And tasty. So win-win-win!

 

Prep/cooking time = 20 mins

Ingredients

1 tin tomatoes

1 tin chickpeas (rinsed)

1 small onion, 1 clove garlic, olive oil

Big handful of dill

Feta cheese

6-10 cherry tomatoes (or 1-2 tomatoes), chopped

Cous cous (plus butter and lemon)

 

Dash some olive oil in a pan, fry the chopped onion and then add the garlic. When soft, add the fresh tomatoes. Cook for a minute or two, then add the tinned tomatoes and tinned chickpeas (make sure you rinse the chickpeas!)

 

Chop a big handful of dill (ooh smells so good!) and thow it in. That’s pretty much it. It’s ready.

 

Serve with cous cous and crumbled feta on top. I make cous cous the cheater’s way: I put the cous cous in a bowl and pour boiling water from the kettle until the cous cous is covered and there’s some extra water sitting on top. In about 1 minute the grain will have soaked up all the water, then use a fork to separate and add a small knob of butter and some lemon juice.

 

You could also serve it with rice, or even pasta. Serves 2-3.
